And to guarantee quality and authenticity we carry out a very long, tiring and complex job with passion and total dedication, ignored by most, of which the sale is only the final stage.
Over the years we have created a dense, trusted and faithful network of farmers and breeders residing in the mountain areas adjacent to the Municipality of Arquata del Tronto from which we personally go to examine the animals. Calves, bullocks, cows, steers, sheep, lambs, abbacchi and pigs, fed exclusively with natural foods, are then loaded onto the truck and transported to the slaughterhouses of Centrale di Acquasanta Terme or Ascoli Piceno. After slaughtering, the meats are left to hang for a short time and finally arrive on the shop counter, with certification of origin.
