This control APP allows the user to know the complete traceability of the products covered by the PDO Guijuelo, thus guaranteeing the certification of their origin and their differentiated quality.
The Protected Designation of Origin Guijuelo, the cradle of the Iberian, is a public law corporation that verifies compliance with its Specifications for certifying Iberian pork hams and shoulders of differentiated quality, accredited by ENAC by the UNE-ISO 17065 Standard, and exercises by delegation of the MAPA the tasks of Official Control.
The PDO Guijuelo controls all the processes from the origin of the raw material to final consumption. To do this, it has its own traceability system that is capable of obtaining all the data on an animal or product, regardless of the phase in which it is found.
All our pieces are identified in the slaughterhouses with an inviolable and individually numbered seal that allows correct traceability, with the PDO Guijuelo logo stamped on them, according to the following categories:
Class I: Black Seal
- 100% Iberian Acorn-fed Ham, from 100% Iberian pigs, with a weight of the processed pieces greater than 6.5 Kg. and a minimum production period of 730 days. In the event that the minimum period of production of the hams in this category is greater than 800 days, the indication "Great Selection" may be included on the band as an optional mention, in the same visual field as the sales denomination.
- 100% Iberian Acorn-fed Shoulder, from 100% Iberian pigs, with a weight of the processed pieces greater than 3.7 Kg. and a minimum production period of 365 days. In the event that the minimum period for the production of shoulders in this category is greater than 425 days, the indication “Great Selection” may be included on the band as an optional mention, in the same visual field as the sales denomination.
Class II: Red Seal
- Acorn-fed Iberian Ham, from 75% Iberian pigs, with a weight of the processed pieces greater than 7 Kg. and a minimum production period of 730 days. In the event that the minimum period of production of the hams in this category is greater than 800 days, the indication "Great Selection" may be included on the band as an optional mention, in the same visual field as the sales denomination.
- Acorn-fed Iberian Shoulder, from 75% Iberian pigs, with a weight of the processed pieces greater than 4 Kg. and a minimum production period of 365 days. In the event that the minimum period for the production of shoulders in this category is greater than 425 days, the indication “Great Selection” may be included on the band as an optional mention, in the same visual field as the sales denomination.
Class III: Green Seal
- Iberian Cebo de Campo Ham, from 100% Iberian pigs or 75% Iberian breed, with a weight of the processed pieces greater than 6.5 kg for 100% Iberian ham and 7 kg. for 75% Iberian ham and a minimum production period of 730 days.
- Iberian Cebo de Campo Shoulder, from pigs from 100% Iberian pigs or 75% Iberian breed, with a weight of the processed pieces greater than 3.7 Kg. for 100% Iberian shoulder and 4 kg. for 75% Iberian shoulder and a minimum production period of 365 days.
The pieces sent to the market must be identified with the seal, the vitola and the authorized commercial label of the attached dryer/cellar.
The PDO Guijuelo certifies other presentations for consumption, boneless, portioned and sliced, guaranteeing their traceability by placing a single official numbered back label with the PDO logo on the container, allowing the product to be traced back to its origin.
Only the product that is certified by the Regulatory Council is authentic "Guijuelo", since the term Guijuelo is a protected term and limited to products covered by the PDO Guijuelo.
