Cara Memasak :
Buang kulit dan tulang ikan roa, suwir-suwir. Haluskan menggunakan food processor.
Panaskan wajan, sangrai ikan roa yang sudah dihaluskan hingga harum. Angkat, sisihkan.
Di dalam wajan bekas menyangrai ikan, panaskan minyak. Tumis bumbu halus hingga harum dan matang. Masukkan ikan roa, aduk rata.
Tambahkan tomat, garam, dan gula. aduk rata. Masak hingga matang dan bumbu meresap ke dalam ikan roa. Angkat. Sajikan

~ 3 sendok makan minyak untuk menumis
~ 500 gram daging ikan cakalang asap
~ 2 batang serai, di memarkan
~ 1 buah jeruk limau, ambil airnya saja
~ 1 ikat daun kemangi, ambil daun nya
~ 5 lembar daun jeruk, di iris2 halus
~ 2 cm lengkuas, di memarkan
~ 3 cm jahe, di memarkan
Bahan bumbu-bumbu halus:
~ 1 sendok teh terasi bakar(harus di bakar)
~ 8 buah cabai merah
~ 1 sendok teh garam
~ 7 buah cabai rawit merah
~ ½ sendok teh gula pasir
~ 8 buah bawang merah

Cara membuat :
Tahap 1. Suwir-suwir daging ikan cakalang, goreng sebentar kemudian sisihkan
Tahap 2. Tumis bumbu halus, jahe, serai, daun jeruk, lengkuas sambil diaduk-aduk sampai harum
Tahap 3. Masukkan suwiran ikan cakalang, aduk-aduk rata. Masak sambil diaduk sampai bumbu2nya meresap
Tahap 4. Tambahkan kemangi dan air jeruk limau, aduk rata. Kemudian di masak sampai matang.

Cara Membuat Cakalang Pampis

Bahan-Bahan

500 gram ikan tongkol/cakalang
2 buah jeruk nipis, peras airnya
3 sdm minyak goreng untuk menumis
Haluskan :

6 butir bawang merah
4 siung bawang putih
8 buah cabe rawit merah
15 buah cabe merah keriting
1 sdt garam
2 cm jahe
1 batang serai, di memarkan
1 ½ sdt gula pasir
1 batang daun bawang

Cara Membuat :

Bersihkan dahulu ikan untuk kemudian dikukus hingga matang. Selanjutnya suwir-suwir daging ikan, lalu campurkan dengan air perasan jeruk nipis sambil di aduk rata.
Panaskan minyak goreng untuk menumis bumbu-bumbu yang telah dihaluskan bersama daun bawang dan serai hingga harum dan matang.
Selanjutnya masukkan daging ikan tongkol yang telah di suwir, aduk secara merata. Masak menggunakan api tekanan/volume kecil sampai kering. Angkat dan sajikan.
