This book will be of interest to food scientists and technologists, food process engineers, biochemists, nutritionists, public health professionals, and entrepreneurs involved in the design, processing, and marketing of new functional food products.
The editors also expand discussion presented in their previous books on phytochemicals. They explore new research on phytochemicals in the Vaccinium family (cranberries, blueberries and bilberries), wine, and oilseeds, and the biological activity of Echinacea in humans. Additional chapters present new information about isothiocyanates, lycopene, carotenoids other than beta-carotene, tocotrienols, and phytoestrogens. Highlighting phytochemicals that have significant potential for promoting health or preventing disease, Phytochemicals in Nutrition and Health expands discussions of appropriate research methodologies and new technologies in this exciting field.
Dr. Fuhrman doesn’t believe the secret to staying healthy lies in medical care—rather, the solution is to change the way we eat. With more than 85 plant-based recipes, a two-week menu plan, and lists of super foods that boost immunity, Dr. Fuhrman’s proven strategies combine the latest data from clinical tests, nutritional research, and results from thousands of patients .
Fans of Alejandro Junger’s Clean, Mark Hyman’s Ultraprevention, and T. Colin Campbell’s The China Study will appreciate Dr. Fuhrman’s practical plan to prevent and reverse disease—no shots, drugs or sick days required.
A fascinating Jazz Age tale of chemistry and detection, poison and murder, The Poisoner's Handbook is a page-turning account of a forgotten era. In early twentieth-century New York, poisons offered an easy path to the perfect crime. Science had no place in the Tammany Hall-controlled coroner's office, and corruption ran rampant. However, with the appointment of chief medical examiner Charles Norris in 1918, the poison game changed forever. Together with toxicologist Alexander Gettler, the duo set the justice system on fire with their trailblazing scientific detective work, triumphing over seemingly unbeatable odds to become the pioneers of forensic chemistry and the gatekeepers of justice.
In 2014, PBS's AMERICAN EXPERIENCE released a film based on The Poisoner's Handbook.

He offers a complete health transformation, starting with a diet with a high nutrient-per-calorie ratio that can be adapted for individual needs.
Dr. Fuhrman makes clear that we don’t have to “control” diabetes. Patients can choose to follow better nutritional guidelines that will control it for them, even before they have lost excess weight. The end result is a medical breakthrough—a comprehensive reversal of the disease.

Research shows that by focusing their diet on 8 critical, nutrient-rich Superfoods--and eating as they normally would, but only within an 8-hour window each day--readers really can eat whatever they want, while losing weight faster than they ever imagined. The timing mechanism is such that it will reset a dieter's metabolism so that he or she can enter fat-burning mode first thing in the morning--and stay there all day long.
In the book, readers will additionally find motivating strategies, cheating tips for those days when an 8-hour schedule is impossible, a sample eating plan, delicious recipes (of course, rich in Superfoods), an eight-minute daily workout routine to maximize calorie burn, and a bonus workout for those looking not only to lose weight but also to tone their bodies. The 8-Hour Diet promises to strip away unwanted pounds, and to give readers the focus and willpower they need to reach all of their goals for weight loss (and otherwise).
Whether you are seeing a doctor, nutritionist, or a trainer, all of them advise to eat more protein. Foods, drinks, and supplements are loaded with extra protein. Many people use protein for weight control, to gain or lose pounds, while others believe it gives them more energy and is essential for a longer, healthier life. Now, Dr. Garth Davis, an expert in weight loss asks, “Is all this protein making us healthier?”
The answer, he emphatically argues, is NO. Too much protein is actually making us sick, fat, and tired, according to Dr. Davis. If you are getting adequate calories in your diet, there is no such thing as protein deficiency. The healthiest countries in the world eat far less protein than we do and yet we have an entire nation on a protein binge getting sicker by the day.
As a surgeon treating obese patients, Dr. Davis was frustrated by the ever-increasing number of sick and overweight patients, but it wasn't until his own health scare that he realized he could do something about it. Combining cutting-edge research, with his hands-on patient experience and his years dedicated to analyzing studies of the world’s longest-lived populations, this explosive, groundbreaking book reveals the truth about the dangers of protein and shares a proven approach to weight loss, health, and longevity.
Expanding on the film's themes, the book Food, Inc. will answer those questions through a series of challenging essays by leading experts and thinkers. This book will encourage those inspired by the film to learn more about the issues, and act to change the world.

The most universally respected and read medical text in all of pharmacology, Goodman & Gilman’s The Pharmacological Basis of Therapeutics represents the pinnacle of authority and accuracy in describing the actions and uses of therapeutic agents in relation to physiology and pathophysiology. Goodman & Gilman’s careful balance of basic science and clinical application has guided thousands of practitioners and students to a clear understanding of the drugs essential to preventing, diagnosing, and treating disease.

The companion DVD includes all the images and tables in the text along with narrated animations.
Goodman & Gilman’s The Pharmacological Basis of Therapeutics, 12e is divided into nine sections, covering:
More than a textbook, Goodman & Gilman's is a working template for the effective and rational prescribing of drugs in daily practice.
Developed by pioneering British MD Dr. Natasha Campbell-McBride, who provides the book’s Foreword, Gut and Psychology Syndrome (GAPS) refers to disorders, including ADD/ADHD, autism, addictions, depression, and obsessive-compulsive disorder, stemming from or exacerbated by leaky gut and dysbiosis. GAPS also refers to chronic gut-related physical conditions, including celiac disease, rheumatoid arthritis, diabetes type one, and Crohn’s disease, as well as asthma, eczema, allergies, thyroid disorders, and more. An evolution of the Specific Carbohydrate Diet, the GAPS Diet will appeal to followers of the Paleo Diet, who are still struggling for optimum health, as well as anyone interested in the health benefits of fermentation or the Weston A. Price approach to nutrition.
In The Heal Your Gut Cookbook, readers will learn about the key cooking techniques and ingredients that form the backbone of the GAPS Diet: working with stocks and broths, soaking nuts and seeds, using coconut, and culturing raw dairy. The authors offer encouraging, real-life perspectives on the life-changing improvements to the health of their families by following this challenging, but powerful, diet.
The GAPS Diet is designed to restore the balance between beneficial and pathogenic intestinal bacteria and seal the gut through the elimination of grains, processed foods, and refined sugars and the carefully sequenced reintroduction of nutrient-dense foods, including bone broths, raw cultured dairy, certain fermented vegetables, organic pastured eggs, organ meats, and more.
The Heal Your Gut Cookbook is a must-have if you are following the GAPS Diet, considering the GAPS Diet, or simply looking to improve your digestive health and—by extension—your physical and mental well-being.
While no one wants to take medication to treat diabetes, high blood pressure, heart disease, or other ailments, for millions of people, this is a daily reality. Seven out of ten Americans take prescription drugs. But when it comes to food and medicine interactions, what you don’t know can harm your health.
Don’t Eat This If You’re Taking That takes the mystery out of food and medications, providing an easy-to-use guide for anyone taking a medication—short term or long term—that indicates foods to avoid that can interfere with the action of the medication. Readers can easily find a medication, see what foods to avoid, and make some smart swaps. Small diet changes learned from this book can have big health payoffs!
An added bonus in each chapter is a Dietary Supplements Alert box, providing the most up-to-date information on interactions with vitamins, minerals, and other dietary supplements. We all believe a diet rich in colorful fruits and vegetables, lean proteins, whole grains, and low-fat dairy products is the path to healthy eating, right? Not always. Consumers can easily personalize their healthiest eating plan to work with not against their medications.
Like most Americans, Steve Ettlinger eats processed foods. And, like most consumers, he didn't have a clue as to what most of the ingredients on the labels mean. So when his young daughter asked, Daddy, what's polysorbate 60?, he was at a loss and determined to find out.
From the phosphate mines in Idaho to the oil fields in China to the Hostess factories and their practices, Twinkie, Deconstructed demystifies some of the most common processed food ingredients, where they come from, how they are made, how they are used, and why. Beginning at the source (hint: they're often more closely linked to rock and petroleum than any of the four food groups), we follow each Twinkie ingredient through the process of being crushed, baked, fermented, refined, and/or reacted into a totally unrecognizable goo or powder, all for the sake of creating a simple snack cake.
An insightful exploration of the modern food industry, if you've ever wondered what you're eating when you consume foods containing mono- and diglycerides or calcium sulfate (the latter a food-grade equivalent of plaster of paris), this book is for you. Consequently, as Hostess plans to permanently close its doors in 2012, this book will provide a relevant guide into the practices of one of the biggest companies of all time.
While Katz expertly contextualizes fermentation in terms of biological and cultural evolution, health and nutrition, and even economics, this is primarily a compendium of practical information—how the processes work; parameters for safety; techniques for effective preservation; troubleshooting; and more.
With two-color illustrations and extended resources, this book provides essential wisdom for cooks, homesteaders, farmers, gleaners, foragers, and food lovers of any kind who want to develop a deeper understanding and appreciation for arguably the oldest form of food preservation, and part of the roots of culture itself.
Readers will find detailed information on fermenting vegetables; sugars into alcohol (meads, wines, and ciders); sour tonic beverages; milk; grains and starchy tubers; beers (and other grain-based alcoholic beverages); beans; seeds; nuts; fish; meat; and eggs, as well as growing mold cultures, using fermentation in agriculture, art, and energy production, and considerations for commercial enterprises. Sandor Katz has introduced what will undoubtedly remain a classic in food literature, and is the first—and only—of its kind.
After years of dedicated study and research that took him to six continents, Cherniske has arrived at a new paradigm that radically alters our understanding of the aging process and the human potential for longevity. Far from giving out due to inevitable wear and tear, the human body is naturally endowed with astonishing powers of renewal, self-repair, and regeneration. The secret to unlocking these powers lies not in genetic tinkering or a high-tech fix, but in outsmarting mother nature at her own game.
As Cherniske explains, a simple adjustment in your metabolism can profoundly alter your energy level, strength and stamina, your body’s ability to fight disease, even the intensity of your sexual desire and fulfillment. In short, by following his regime, you can essentially “trick” your body into adopting the metabolism of a twenty-year-old. The Metabolic Plan takes you step-by-step through the process of natural rejuvenation. Here is a comprehensive diet and exercise plan specifically tailored to boost antioxidant levels, combat disease, increase muscle, reduce fat, and enhance memory and vision. Cherniske shares the age-defying properties of such cutting-edge supplements as 7-Keto and debunks myths about acid/alkaline foods. Here too are detailed metabolic plans geared to the different needs of men and women and to every decade of our lives—so we’ll know exactly what to focus on when.
Longer life, more energy, improved health, a pervasive sense of well-being: it sounds too good to be true, but it’s all within our grasp. At once revolutionary and eminently practical, this is the book that finally solves the puzzle of aging.

Most DIY cheesemaking books are hard to follow, complicated, and confusing, and call for the use of packaged freeze-dried cultures, chemical additives, and expensive cheesemaking equipment. For though bread baking has its sourdough, brewing its lambic ales, and pickling its wild fermentation, standard Western cheesemaking practice today is decidedly unnatural. In The Art of Natural Cheesemaking, David Asher practices and preaches a traditional, but increasingly countercultural, way of making cheese—one that is natural and intuitive, grounded in ecological principles and biological science.
This book encourages home and small-scale commercial cheesemakers to take a different approach by showing them:
• How to source good milk, including raw milk;
• How to keep their own bacterial starter cultures and fungal ripening cultures;
• How make their own rennet—and how to make good cheese without it;
• How to avoid the use of plastic equipment and chemical additives; and
• How to use appropriate technologies.
Introductory chapters explore and explain the basic elements of cheese: milk, cultures, rennet, salt, tools, and the cheese cave. The fourteen chapters that follow each examine a particular class of cheese, from kefir and paneer to washed-rind and alpine styles, offering specific recipes and handling advice. The techniques presented are direct and thorough, fully illustrated with hand-drawn diagrams and triptych photos that show the transformation of cheeses in a comparative and dynamic fashion.
The Art of Natural Cheesemaking is the first cheesemaking book to take a political stance against Big Dairy and to criticize both standard industrial and artisanal cheesemaking practices. It promotes the use of ethical animal rennet and protests the use of laboratory-grown freeze-dried cultures. It also explores how GMO technology is creeping into our cheese and the steps we can take to stop it.
This book sounds a clarion call to cheesemakers to adopt more natural, sustainable practices. It may well change the way we look at cheese, and how we make it ourselves.
Today's busy people have turned to ready-made, processed, chemically laden "healthy" alternatives in the name of convenience and succumb to a litany of conditions: weight gain, lethargy, hormonal imbalance, arthritis, diabetes, high blood pressure and high cholesterol. These devastating conditions are commonly excused as "part of the normal passage of aging"

Is this a raw foods cookbook?
Is this a paleo smoothies ebook? Does it contain gluten free smoothie recipes?
Are these recipes vegetarian or vegan? It's kinda like all 5 and more without being boxed into any one category. For example, you’ll find a few ingredients in some of the recipes such as Raw Honey. And that isn’t technically a vegan product so this book can’t be considered 100% vegan.
However, the recipes are designed to make it very easy for people who follow any style of eating to enjoy these recipes. Honey for example could be switched out for coconut palm sugar, or maple syrup. Another example is I provide several recipes to use as a “base” for your smoothies and one of these base recipes is Fresh Oat Mylk.
Even though many people who are focused on a gluten free diet eat oats, some experts argue that oats aren’t the best for people with gluten intolerances. The oats can get contaminated from local fields growing wheat, and so therefore folks with gluten sensitivities may experience negative side effects. In this case you would just use one of the other base recipes.
Did you know that by just simply adding in one of these easy-to-make superfood or super herbal elixir recipes into your daily regimen it can dramatically improve your overall health and quality of life? Fourteen novels. Fourteen poisons. Just because it's fiction doesn't mean it's all made-up ...
Agatha Christie revelled in the use of poison to kill off unfortunate victims in her books; indeed, she employed it more than any other murder method, with the poison itself often being a central part of the novel. Her choice of deadly substances was far from random – the characteristics of each often provide vital clues to the discovery of the murderer. With gunshots or stabbings the cause of death is obvious, but this is not the case with poisons. How is it that some compounds prove so deadly, and in such tiny amounts?
Christie's extensive chemical knowledge provides the backdrop for A is for Arsenic, in which Kathryn Harkup investigates the poisons used by the murderer in fourteen classic Agatha Christie mysteries. It looks at why certain chemicals kill, how they interact with the body, the cases that may have inspired Christie, and the feasibility of obtaining, administering and detecting these poisons, both at the time the novel was written and today. A is for Arsenic is a celebration of the use of science by the undisputed Queen of Crime.
With global population numbers projected to increase by 2 billion by 2050, a veritable food crisis is on the horizon. In this eBook, Can We Feed the World? The Future of Food, we examine some of the complex causative factors involved in the coming "food crisis" and the innovative ideas and technologies designed to increase food production sustainably. We also examine current industry methods to increase production and the controversies surrounding them, including not only hot-button issues like genetically modified (or GM) and processed foods, but also food safety and the physical effects of the modern diet. To start the discussion, Jonathan Foley throws down the gauntlet with the first article, "The Grand Challenge: Can We Feed the World and Sustain the Planet?" In it he takes a macroscopic look at the coming crisis and presents five solutions that could both double the world's food production by mid-century as well as decrease greenhouse gas emissions and curb environmental damage. Other articles discuss technologies ranging from more sustainable offshore fish farming to "vertical farms," and an entire section tackles GM crops. Hugely controversial, GM crops are either the magic bullet that will save millions from starvation or Frankenstein's monster. To that end, don't miss Sasha Nemecek's "The Pros and Cons of GM Foods," in which she interviews experts on both sides of this issue, as well as "Three Myths about Genetically Modified Crops," by Natasha Gilbert. Later, we delve into the processed food industry, taking a magnifying glass to fast food and high fructose corn syrup, as well as food safety issues, including monitoring sources of contamination as well as preventing food poisoning. With all the possibilities on the horizon—from GM crops to new technologies in farming and fishing—world hunger does not have to be inevitable, but we'll need to be resourceful in managing the food supply so that we can preserve the planet and ourselves.

Graham. Raw Soups are a favourite in the winter and in the summer
because they can be slightly warmed or chilled to create the perfect
snack or meal. "Soups" is the second volume in the 80/10/10 Raw Food
Recipe Series. These recipes are "Simply Delicious" because they bring
to life incredible 80/10/10 recipes that are gourmet, low-fat and have a
small number of simple ingredients. Dr. Graham and co-author Katy
Craine created and thoroughly tested these recipes in Dr. Graham's own
kitchen to ensure that you can reproduce these recipes in your own
kitchen - simply and quickly.
From Dr. Graham: "Simply Delicious Soups! I like soups, what can I say?
Many of my favorite soups today remind me of the soups my mother used
to make for me when I was a little boy. Minestrone, cream of tomato,
pea, borsht, gazpacho, and mushroom soups were some of her regulars.
When I first went raw, most of the soups I made were fruit soups:
strawberry soup, watermelon soup and peach soup. Eventually I developed a
desire for hearty vegetable soups as well, and have spent the last
decade perfecting the recipes for a wider variety of such dishes. Soups
make a great transition when served between fruit and saIad courses. Raw
soups can be enjoyed by anyone, even if they aren’t devout raw
foodists. I hope you will enjoy making all of the soups in this volume
of 'Simply Delicious 80/10/10 Raw Food Recipes', and will continue
customizing them until they perfectly fit your taste desires."

elsewhere. You're not just getting another flax cracker recipe, you're
getting recipes that just don't exist out there in the raw food world!

Indeed, this book fills a big hole in the market. Beginner guides leave you wanting more content and explanation of process, while recipe-based cookbooks often fail to dig deeper into the science, and therefore don’t allow for a truly intuitive cheesemaker to develop. Acclaimed cheesemaker Gianaclis Caldwell has written the book she wishes existed when she was starting out. Every serious home-scale artisan cheesemaker—even those just beginning to experiment—will want this book as their bible to take them from their first quick mozzarella to a French mimolette, and ultimately to designing their own unique cheeses.
This comprehensive and user-friendly guide thoroughly explains the art and science that allow milk to be transformed into epicurean masterpieces. Caldwell offers a deep look at the history, science, culture, and art of making artisan cheese on a small scale, and includes detailed information on equipment and setting up a home-scale operation. A large part of the book includes extensive process-based recipes dictating not only the hard numbers, but also the concepts behind each style of cheese and everything you want to know about affinage (aging) and using oils, brushes, waxes, infusions, and other creative aging and flavoring techniques. From Dr. Dharma Singh Khalsa, acclaimed author of the national bestseller Meditation as Medicine, comes Food as Medicine -- a remarkable book that balances both of Dr. Khalsa's specialties by advising readers on how to achieve maximum health from simply eating responsibly and well.
Grounded in medical science, Food as Medicine is a pragmatic and accessible reference for anyone seeking guidance on healthy eating or simple food remedies. Dr. Khalsa begins by setting readers on the right nutritional path -- regardless of their current eating habits -- and explains how to go organic, how to use natural organic juices and foods as medicine, and how special-food diets can help reverse the progress or diminish the symptoms of certain diseases, such as Alzheimer's or Hepatitis C.
The book is filled with interesting food facts: Blueberries can increase brain longevity through their ability to help release dopamine in the brain. Kiwi fruit, because of its high levels of disease-fighting antioxidants and phytonutrients, is said to be an excellent source in battling cancer and heart disease. Pears, with their high content of certain minerals and fibers, can help prevent fibroid tumors.
Drawing on Dr. Khalsa's own life experience as well as patient case histories, Food as Medicine outlines the seven principles of "The Khalsa Plan," details information on his other nutritional plans designed to target specific ailments, and lays out dozens of delicious, time-tested recipes that promote overall health and well-being.
This NS Textbook on Sport and Exercise Nutrition has been written to cover the latest information on the science and practice of sport and exercise nutrition. A key concept behind this textbook is that it aims to combine the viewpoints of world leading nutrition experts from both academia/research and a practical stand point. Plus where necessary there are additional practitioner based authors to ensure theory is translated into practice for each chapter in the form of either ‘practice tips' or ‘information sheets' at the end of relevant chapters.
The textbook in essence can be divided into three distinct but integrated parts:Part 1: covers the key components of the science that supports the practice of sport and exercise nutrition including comprehensive reviews on: nutrients both in general and as exercise fuels; exercise physiology; hydration, micronutrients; and supplements. Part 2: moves into focusing on specific nutrition strategies to support different types of training including: resistance; power/sprint; middle distance/speed endurance; endurance; technical/skill, team; and specific competition nutrition needs.
The unique format of this textbook is that it breaks down nutrition support into training specific as opposed to the traditional sport specific support. This reflects the majority of current sport and exercise requirements of the need to undertake concurrent training and therefore facilitating targeted nutrition support to the different training components through the various macro and micro training cycles. Part 3: explores some of the practical issues encountered in working in the sport and exercise nutrition field and includes key sport related topics such as: disability sport; weight management; eating disorders; bone and gut health; immunity; injury; travel; and special populations and situations.

Human nutrition expert and author of the critically acclaimed What to Eat, Marion Nestle, Ph.D., M.P.H., has joined forces with Malden C. Nesheim, Ph.D., a Cornell animal nutrition expert, to write Feed Your Pet Right, the first complete, research-based guide to selecting the best, most healthful foods for your cat or dog. A comprehensive and objective look at the science behind pet food, it tells a fascinating story while evaluating the range of products available and examining the booming pet food industry and its marketing practices. Drs. Nestle and Nesheim also present the results of their unique research into this sometimes secretive industry. Through conversations with pet food manufacturers and firsthand observations, they reveal how some companies have refused to answer questions or permit visits. The authors also analyze food products, basic ingredients, sources of ingredients, and the optimal ways to feed companion animals. In this engaging narrative, they explain how ethical considerations affect pet food research and product development, how pet foods are regulated, and how companies influence veterinary training and advice. They conclude with specific recommendations for pet owners, the pet food industry, and regulators. A road map to the most nutritious diets for cats and dogs, Feed Your Pet Right is sure to be a reference classic to which all pet owners will turn for years to come.

A few years ago, journalism professor McKay Jenkins went in for a routine medical exam. What doctors found was not routine at all: a tumor, the size of a navel orange, was lurking in his abdomen. When Jenkins returned to the hospital to have the tumor removed, he was visited by a couple of researchers with clipboards. They had some questions for him. Odd questions. How much exposure had he had to toxic chemicals and other contaminants? Asbestos dust? Vinyl chlorine? Pesticides? A million questions, all about seemingly obscure chemicals. Jenkins, an exercise nut and an enviro-conscious, organic-garden kind of guy, suddenly realized he’d spent his life marinating in toxic stuff, from his wall-to-wall carpeting, to his dryer sheets, to his drinking water. And from the moment he left the hospital, he resolved to discover the truth about chemicals and the “healthy” levels of exposure we encounter each day as Americans.
Jenkins spent the next two years digging, exploring five frontiers of toxic exposure—the body, the home, the drinking water, the lawn, and the local box store—and asking how we allowed ourselves to get to this point. He soon learned that the giants of the chemical industry operate virtually unchecked, and a parent has almost no way of finding out what the toy her child is putting in his or her mouth is made of. Most important, though, Jenkins wanted to know what we can do to turn things around. Though toxins may be present in products we all use every day—from ant spray, perfume, and grass seed to shower curtains and, yes, baby shampoo—there are ways to lessen our exposure. ContamiNation is an eye-opening report from the front lines of consumer advocacy.
