Sofra was built around Faten — a generous home cook in our Beirut building, originally from Idlib province, whose cooking and culture we wanted to celebrate. Her recipes are the spine of the app. The Idlib dishes — 44 of them — are, to our knowledge, the first dedicated English-language collection of that province's home cooking. Idlib has long been folded into pan-Syrian and Aleppo cookbooks; this is the first English collection that surfaces it as its own kitchen.
