In 1983 Giuseppe and some friends opened a restaurant in the historic center based on the idea of a single dish, tasty salads, for all people who have lunch quickly.
It was a small revolution in catering, at a time when everyone was enthusiastic about the large international chains of all the same meals.
The Ricca Salad was distinguished instead from the beginning for the little processed, always fresh, high quality foods and for the personal attention to the customer, always considered a guest.
After almost 30 years, this idea has become an appreciated restaurant chain, which has always maintained family management and an artisan approach.
Each restaurant is in fact managed personally by those who deal with it, each restaurant therefore has its own personality also as regards the gastronomic offer over time, in fact, the menu has been considerably enriched offering customers a truly considerable choice.
