## Problem
Every App Store release closes that version's train, after which App
Store Connect 409-rejects any upload at or below it. The iOS pipeline
had **two hand-maintained anchors** that both needed bumping after every
release: the pubspec `version` (used by merge-to-main TestFlight smoke
builds) and `MIN_APP_STORE_VERSION` in the workflow (the tag gate). Both
