Boring Gallery holds no internet permission at all, so nothing it reads can be sent anywhere. It opens the photos already on your device and never copies, moves or uploads them. Favourites, albums and hidden items are stored only on your phone.
About hiding: hidden items are filtered out of this app and kept behind your fingerprint or screen lock. The files themselves stay where they are in storage, so other apps can still reach them. Think of it as tidiness plus a lock on the door, not encryption.
