RUCO – Repurpose Used Cooking Oil is an initiative by FSSAI under Eat Right India to safeguard consumer health and promote sustainable practices.
Repeated frying of vegetable oil increases Total Polar Compounds (TPC), which are linked to serious health risks such as hypertension, atherosclerosis, liver diseases, and Alzheimer’s disease. To protect public health, FSSAI has mandated that cooking oil with TPC above 25% must not be used.
From July 1, 2018, all Food Business Operators (FBOs) are required to monitor oil quality during frying and comply with RUCO regulations.
