Grammatura is the pizza dough calculator for anyone who wants to get it exactly right — no internet connection required, no account, no compromises in the math.

⚖️ CALCULATES THE WAY YOU THINK
Enter your number of dough balls — or flip it around and tell Grammatura how much flour you have. Everything in 1-gram steps, never rounded to clumsy 10-gram increments. Small info buttons on every field help beginners without getting in the way of pros.

🧫 YEAST CALCULATED AUTOMATICALLY
Fresh yeast, dry yeast, instant dry yeast, or sourdough starter: the amount is calculated automatically from bulk fermentation time and temperature, including cold proofing in the fridge, calibrated against trusted baker references.

🥖 PREFERMENTS WITHOUT THE MATH ERRORS
Poolish is correctly calculated as a percentage of the water, biga as a percentage of the flour. Negative amounts, which show up in some other calculators, are impossible in Grammatura.

⏰ A SCHEDULE THAT PLANS BACKWARD
Tell Grammatura when you want to eat — the app works backward from there: start your preferment, mix, bulk ferment, ball up, preheat the oven. With optional reminders that notify you at exactly the right moment.
