We only use Italian meats coming mainly from the regions of central Italy; Marche for Turkey, Trout, and Salmon, Abruzzo for Lamb and Beef, Lazio for Buffalo, Horse and Beef, Tuscany and Umbria for Rabbit and Chicken, Emilia Romagna and Veneto for Cockerel and Quail; all meat certified and controlled at the slaughterhouses of origin by the Local Health Authorities, coming from the supply chain for human consumption; processed and frozen meats quickly in order to preserve the nutritional qualities of the products.
