Jamie kicks things off by celebrating vegetables in a game-changing cottage pie, with a stunningly rich gravy and super-fluffy mash. He's inspired by amazing Indian street food, then makes a brilliant chip butty; packed full of spice, flavour and crunch. He goes back to school to meet kids who are celebrating vegetables, and loads a mighty mac 'n' cheese full of greens! And to continue his quest into veggie street food, he samples stuffed chillies, then heroes veg by turning a Pad Thai into a meat-free feast – silky, crunchy and topped with a crispy chilli egg.

Jamie knocks out a kick-ass chili that proves vegetables can pack a mighty punch! In India, he learns nifty new tricks to make veggies sing and creates a spiced parsnip soup, full of texture and surprise. He's inspired by traditional and modern street food in the Middle East, then rustles up meat-free pasties that will make your mouth water. Then, closer to home, he discovers an inner-city oasis of veg, and tops it all off by making cauliflower cheese like you've never seen it before.

Jamie gets the veg party started with his beautiful, bold black bean burger, topped with a fresh and colorful salsa, mango and avocado. He's inspired by gorgeous greens in the Middle East, followed by a charred, crunchy salad with the coolest croutons. In India, he learns to cook vegetables on an epic scale and dishes up a flavourful curry that's singing with spices. Finally, Jamie gets hands-on with the humble leek, and uses it to give his carbonara a luxurious veggie twist.

Continuing his search for ultimate vegetable-inspiration, Jamie heads to the spice shops of Jerusalem, and cooks up a show-stopping cauliflower roast.

Jamie tastes Yemeni pancakes on his travels, then puts vegetables center stage with two recipes for the price of one, making a stunning flavor-packed asparagus quiche, buddied up with a sublimely silky soup.
