If you want to know how to make a variety of well-known as well as niche dishes, don't experiment for yourself, America's Test Kitchen has already done the grunt work for you. Everything from chicken to chocolate is spelled out in exacting detail. Not only do they show you what to do but also the reasons for doing it! I highly recommend both the television shows and books but also their excellent Web site. Become a member and gain full access to all the little gastronomic secrets! :-)

I bought the cookbook and I haven't been let down by any of their methods. I like that they don't just tell you what to do, but why it's done that way. They have helped my cooking skills immensely.

It would have been nice to find this before I was going to cancel it.
