Styles
Choose between Neapolitan and New York presets. Neapolitan locks in the traditional parameters — lower hydration, higher salt, no oil, baked fast at extreme heat. New York style adjusts for a longer bake, moderate hydration, and olive oil for a crispier, more tender crust. Every setting updates your ingredients and method in real time.
Fermentation
Room temp or cold ferment — your choice. Cold fermentation slows the yeast to a crawl while the flour's enzymes keep working, building up free sugars and amino acids that drive deep browning, blistering, and complex flavour in the oven. The yeast model accounts for your kitchen temperature, salt percentage, and total fermentation time automatically.
