Dieser Band geht zurück auf einen Workshop in Wageningen (NL) im November 1994, der von der Carbohydrate Research Foundation organisiert worden ist. In 16 Beiträgen weltweit führender Experten werden neue Anwendungsmöglichkeiten von Kohlenhydraten in der industriellen Chemie vorgestellt.
Neben anderen werden folgende Kohlenhydrate zentral behandelt: Inulin, Lactose, Milchsäure, Polydextrose und Alkyl-Polyglucosid.

Acerca do autor
Herman van Bekkum is a Dutch organic chemist. He was professor of Catalysis in Organic Chemistry between 1971 and 1998 at Delft University of Technology. He served as rector magnificus of the university between 1975 and 1976. His expertise lies in the field of carbohydrate chemistry and zeolites.
Harald Röper is the editor of Carbohydrates as Organic Raw Materials III, published by Wiley.
