About this eBook

Abstract: In 1963, the USDA's research program in food and nutrition was funded at less than $2 million; the increases proposed for the following 3 year period included an increase of professional staff from 80 to 148, expansion of existing facilities at Beltsville, and construction of 3 new laboratories in other parts of the country raising the cost of $9 million. Programs to be implemented were investigations of fat in the diet, nutritional adequacy, nutrient utilization, consumer research, aging, food composition, nutrient content, and processing effects. The case for expanded research facilities and funds is supported by USDA history, descriptions of projects in process, and definition of future directions.
