if youre going vegan, i recommend "Theres a vegan in the house" by DK. This book writes about variety of vegetables but no recipe includes dark, leafy greens which is stated in the beginning of the book how important it is. Which it is. This book is good for some basic and small dishes but no where near thw amount of vegetables you need per day. tofu and tempeh is not really enough for a meal.
