Cajun food has become a popular ethnic food throughout America during the last decade. The author takes into account the modern regional popular culture in examining traditional foodways of the Cajuns.

The symbolic power of Cajun food is deeply rooted in Cajuns' ethnic identity, especially their attachments to their natural environment and their love of being with people.

Sobre o autor

C. Paige Gutierrez received her doctorate in anthropology from the University of North Carolina. Her research has concentrated on Cajun foodways. In addition to publishing several articles on traditional foodways, she has served as an anthropologist with her native city of Biloxi, Mississippi. Barry Jean Ancelet, a professor of French and Francophone studies at the University of Southwestern Louisiana, is author of many books about the French culture of southern Louisiana, including Cajun Country, Cajun and Creole Folktales: The French Oral Tradition of South Louisiana, and Cajun and Creole Music Makers: Musiciens cadiens et créoles, all published by University Press of Mississippi.
