Management of food safety has made major progress in the last three decades. Today, managers of food businesses have a choice of systems and technological tools to meet food safety. However, the human factor and its role in the management of food safety has not always been explicitly addressed; yet, none of the measures and tools recommended for ensuring food safety will be effective without a qualified and motivated staff. In turn, this relies on the quality of management and the management commitment to food safety.
