This cookbook was created out of my own interest and desire to develop tasty, healthy easy to prepare meals and snacks that accommodate all of my sensitivities and allergies. Which means they must be; gluten free, wheat free, dairy free, sugar free, caffeine free, preservative, additive and chemical free.

It is overwhelming to be told your regular eating habits have to be altered and many people simply dont have a lot of time to be creative in the kitchen. I found there were not many recipes available to help me with all of the sensitivities I had developed and realized there must be other people like me trying to come up with tasty healthy food to enjoy. I have created several quick and simple recipes that provide very healthy and flavourful dishes.

There is a wide variety from snacks to full meals and these dishes are sure to please your family and even impress your friends without being difficult or too costly. Some ingredients may be new and sound foreign but they are surprisingly easy to find and I have provided tips on many recipes that assist with preparation as well as where to locate many of these items.

Allergies, sensitivities, total intolerance; you name it I have it!

It all started in September 2002 when I developed some serious environmental allergies and over the course of trying to determine the exact cause and subsequent treatment, the symptoms were continuous. As one thing would get better something else would become worse or a new symptom would develop. I had regular visits to the allergist for about six – nine months because I was determined to find the cause in order to eliminate it from my life.

After taking antibiotics for about a week to treat an infection, I broke out in a full body allergic reaction (rash) but as the rash diminished all over my body, it seemed to settle on my face and would not go away. This initiated more visits to the doctor and a list of suggested products; creams, soaps etc. were experimented with to try to eliminate the rash. It was itchy, soar, burning, puffy, red and could best be described as diaper rash on my face, which I tried to cover up with anything I could think of! I continued to push for more testing and was finally referred to the Occupational Health Clinic at St. Michael’s Hospital in Toronto to have a different type of patch testing performed. Patch testing is where the doctor puts several different products into these tiny plastic trays much like a miniature ice cube tray and then the tray is taped onto your back. I had between 50 – 70 products taped to my back for four days, and then I got some answers. I learned that I was allergic to all types of formaldehyde as well as nickel and fragrance (along with the items I already knew of; dust, dust mites, mould, smoke and most antibiotics). I quickly learned that formaldehyde seems to be in just about everything in the entire processed world! It is in cosmetics, shampoo, conditioner, hair spray and other hair products, lotions, creams, soaps, toothpaste, mouthwash, household cleaning products, laundry products, dish soap, paint, wax, treated wood, plastics, artificial nails, nail polish and remover, fabrics and clothing that is blended.

It took the better part of a year to cleanse my body with continual boosting of my immune system, which is critical to be able to fight off the effects of the environment.

In November of 2004 I started to have more reactions and after consulting my Naturopathic doctor it seemed as though my sensitivities had expanded into foods. I was often getting flushed, continuous sweating and headaches.

I needed to start avoiding preservatives and chemicals in all foods and beverages and so I started buying and eating as much organic food as I could. I was pleased to discover a great selection of fresh and frozen items available through various sources.

I now shop regularly at the local farmers market, some health food stores and specialty stores as well as the large supermarket. I find it good to shop around as different stores carry different products and the smaller store or local market will have fresher produce even if it isn’t local because they are replenishing their stock more often than the large supermarkets are.

In October of 2006 I decided to have Food Sensitivity Testing (FST) done because I had been experiencing various reactions and again wanted to determine the cause.

The results of my FST were shocking to me because some of the foods that I thought I loved (because I craved them and ate them so often) were really bad for me! After eliminating all of the items on the list and replacing them with healthier alternatives, it was quite amazing how much better I started to feel. My skin, hair, and nails improved. My sleep improved a great deal, and most importantly my digestion, sinuses and mental alertness were dramatically better.

This has been the driving force behind my creating this first cookbook of recipes and suggestions for improved health and wellness. I sincerely hope that you enjoy these recipes and that you also notice an improvement in your body’s reaction to nutritious, all natural and organic foods.
