Linda Larsen , BS in Food Science and Nutrition, (Northfield, MN) is a cookbook author and home economist who specializes in nutrition-based, healthy, slow-cooker, and quick-and-easy recipes. Ms. Larsen has been interviewed by the Wall Street Journal several times for articles about food trends and holiday cooking, and her recipes have appeared in Good Housekeeping?s ?Quick and Simple? magazine. She concentrated on food safety, working around allergies and guests? preferences, and inexpensive party foods. She holds a degree in biology from St. Olaf College, and a degree with high distinction in food science and nutrition from the University of Minnesota.
