Wer Hans Pürstner ́s "Chef special-Der Küchenchef empfiehlt" gelesen hat, kennt es ja schon. Das Kapitel "Resteverwertung" Der Autor hat es hier etwas ausführlicher beschrieben und mit einigen zusätzlichen Rezepten ergänzt. Es handelt sich dabei naturgemäß um ein kleines Büchlein ohne optischen Schnickschnack und die Rezepte sind so einfach gehalten, dass der eigentliche Zweck erfüllt wird ohne dass man mit vielen Extrazutaten am Ende dann doch wieder Reste übrighat.
