About this ebook

Can you imagine life without rice? That is how closely rice is entwined with India's history, tradition and culture. As people travelled across the world, mingling with more cosmopolitan societies, they found newer ways of preparing rice, based on international cuisines, and using modern kitchen tools like electric cookers, the microwave oven, etc., but in some form of the other rice continued to be, and remains, a popular staple food for Indians across the world.

This book will give you more ideas to prepare this magic grain, drawing from Indian and international cuisines. The 39 recipes in this book cover not just pulaos, biryanis and khichdis, but also exciting starters, tempting sweets and interesting international recipes too.

The first section, Scrumptious Pulaos and Biryanis, explores much more than the well-known Vegetable Biryani. Discover innovative options like the Carrot and Moong Dal Pulao and the Minty Paneer Biryani.

Considered as an easily-digestible one-dish meal, the comforting khichdi takes on some exciting hues in our next section, Khichdi Galore! Here, you will find not just simple khichdis like the Spicy Green Moong Dal Khichdi but also more flavour-filled and power-packed ones like the Handi Khichdi and the Hariyali Matki Khichdi.

Although an all-time favourite of ours, rice is much liked in other regions of the world too! In the International Rice Bowl, you will come across some unusual rice preparations from other parts of the world, such as the Broccoli and Basil Rice and the Caribbean Rice.

Even more interesting will be the Crunchy Rice Starters! Have you ever thought of preparing tikkis or pakodas with rice? Here, we show you how to make exciting starters like Spicy Rice Samosa and Herbed Rice on Cream Cracker, which will make your menu stand out as extraordinary! While you might be aware of traditional Indian rice-based desserts like the Quick Rice Kheer, other off-beat options like the Layered Oats and Rice Porridge will come as a pleasant surprise in the Sweet Treats section.

What you can do with a versatile ingredient like rice is nothing short of magic. It is more or less easy to cook, absorbs flavours well, and is generally predictable. So, you can venture to create new recipes by yourself too, once you understand the basics of using rice, such as the right consistency of cooking, the texture of common varieties, etc.

Get busy with your measuring cups and ladles, and create some fantastic rice treats for family. As always, remember to garnish them with your love and care!

Welcome to the digital version of Tarla Dalal’s Chawal! You can now carry your cookbook with you wherever you go.
